Chicken Pastel

Ingredients:

*One 1 1/2 kilo chicken, cut in pieces
*One can (14 ounces) Vienna sausage, sliced
*3 potatoes, diced
*1 carrot, diced
*1 up mushrooms, cut in half
*1 green bell pepper, sliced in strips
*1/2 cup sweet peas
*1 onion, minced
*1/4 cup grated cheese
*1 cup margarine
*2 cups chicken stock (broth)
*1/2 cup evaporated milk
*4 tablespoons soy sauce
*1 lemon extract (juice)
*1 egg, beaten
*Salt and pepper to taste

Pie Crust

*2 cups flour
*1/2 cup corn oil or vegetable oil
*1 teaspoon salt
*1/4 cup of water

Chicken Pastel Cooking Instructions:

*In a bowl, marinate chicken lemon juice and soy sauce for an hour.
*In a skillet, melt margarine and brown chicken, set aside.
*Sauté onion, bell pepper an mushrooms then add chicken broth. Simmer for 15 minutes then add potatoes, carrots, sweet peas, sausages, grated cheese and milk. Continue cooking for 10 minutes. Salt to taste.
*Transfer to a baking dish.
*Pre-heat oven to 450 degrees Fahrenheit.
*On a bowl, combine the flour, salt, cold water and oil. Mix into a ball.
*On a flat surface, roll flat the pastry and cover the chicken pastel mixture and seal the sides by pressing on the edges. Remove excess pastry.
*Punch small holes on the pastry to let out steam during baking then brush with beaten egg.
*Bake until golden brown (about 15 minutes).

Eyeglasses for me!

Sometimes I am having headache after facing the monitor in a few hours. I am sleepy and I am dizzy. I am far sighted. Mom told me to go to an optical clinic for eye check up. I think mom is right I need an eyeglasses. While I was surfing in the net, I found out that Zenni Optical in the New York Times?! That’s amazing huh..
I like this one because it fits to my eyes.

Mango Float


Ingredients:
1 cup heavy cream, chilled
2/3 cup sweetened condensed milk, chilled
1/2 cup mashed ripe mango
1 tsp. vanilla extract
Thin slices of ripe mangoes
Graham Crackers or Slices of Chiffon cake

Garnish: (optional)
Mango slices
Cashew nuts or any chopped nuts you may prefer to use
Maraschino cherries

Instructions:
1. Blend cream and sweetened condensed milk together. Add mashed mango. Add vanilla. Set aside, preferably keeping it chilled until needed. (You may opt to use more sweetened condensed milk for a sweeter taste).

2. In a square 9 x 9-inch or a rectangular 9 x 13-inch Pyrex or any transparent dish, assemble graham crackers and cream mixture by arranging the crackers on the bottom of the dish.

3. Spread one third of the cream mixture, arrange some mango slices, then put another layer of the crackers. Repeat the process, ending with the cream mixture on top.

4. Sprinkle with chopped nuts (optional). Garnish with more slices of mangoes or maraschino cherries for a more festive appeal.

5. Chill before serving.

I prepare this recipe last Christmas because this is one of my hubby’s favorite desert.
